Chinese Chow Mein Noodle Cookies



You know how when you visit a food blog and there is ALWAYS some random story you have to read through before you get to the recipe... well I won't do that to you...today. 


These cookies are super simple, I call them Chinese Chow Mein Noodle Cookies... but I think they more commonly go by Haystacks. Either way they are yummy. 




I enjoyed mine after a delicious dinner of  Beef & Broccoli


Give these cookies a try! The lazy person in you will be pleasantly surprised. 


OR 

Ingredients:
·         1 cup butterscotch chips
·         ½ cup salted peanuts
·         ½ cup peanut butter
·         2 cups chow mein noodles
·         Mini chocolate chips for garnish

Directions:
·      Melt butterscotch chips and peanut butter in a double boiler, or in microwave. Stir until melted and blended.
·     (Take off burner) Stir peanuts and noodles gently into the butterscotch mixture.
·      Drop mixture by forkfuls onto wax paper. Garnish with mini chocolate chips. Cool until set.
·      ENJOY!!!
