Kielbasa & Potato Hash

Who doesn’t love one pot meals? I know I do! This recipe is best made in a cast-iron skillet, so I guess you’d call this a one skillet meal. If you choose to serve this over cabbage, you would need to dirty up one more dish… but wait there’s cutting boards and knives too… Okay so you have to wash a little more than one pot… but don’t let that hinder you from making this delicious recipe. I pinned this recipe from Pintrest, it’s from TheTwo Bite Club, and I tailored it to my liking.

First of all, after making this recipe I was reminded how much I LOVE kielbasa. I used turkey kielbasa to cut down on the fat down a bit, plus I prefer the taste. Secondly, it was the first time I tried making potatoes in a cast-iron skillet! Definitely something I’m going to keep doing, DELICIOUS. Add tri-color peppers, onions, and garlic and this recipe shapes up to be fool-proof deliciousness.

The idea to serve over cabbage was something that came from my mom and memories of childhood meals. Maybe the reason I love kielbasa so much is because we had it many times growing up, and my mom always served it with cabbage. It was SO good! And simple too! I felt this recipe was just a grown up version of what I loved as a child, so it just felt right to serve it over cabbage… and boy was I right :)

Meal Idea: Simple, just add some cornbread and you have a complete meal!
